Erie was missing something real
Authentic Mexican food made with intention, not shortcuts, was hard to find on Colorado's Front Range. Maximina's pulled up and filled that gap — just a trailer window and food that spoke for itself.
A short menu, done obsessively well
Tacos, burritos, quesadillas — a handful of things executed better than anywhere else. Every homemade tortilla and every carne asada burrito carries the confidence of someone who's been doing this a long time.

A former San Diego resident — someone who grew up on the gold standard — called this the best Mexican food in all of Colorado. The asada burrito is exactly that good.
